Depending on the floral origin, honey can be light or dark. Depending on the production area, honey acquires the characteristics of the flora where the bees collect nectar (e.g. eucalyptus, orange, chestnut, etc.). When a particular flowering is not prevalent in an area, the honey is defined as "multi-flower".
